Colu Cooks Easy Fancy Food, by Colu Henry
This is a terrific
cookbook! A best feature is that there
is typically a large photo of the dish being prepared on one side and the
recipe on the opposite page (maybe 2 pages of recipe if needed). Simple, direct, clear.
Colu shares a brief (think paragraph) story about each
dish, I like that, it's fun! A second
best feature is that the recipes have been generally easy. I am a lazy cook and so I want things easy. I do not want to hang around in the kitchen
all day but when I feel a little inspired it was nice to have a cookbook that
had some good ideas. Third best feature
is that the book delivers on the fancy part.
Sure, if a recipe is relatively easy it probably won't be outrageously
fancy but these recipes did turn on a modest amount of fancy.
My first recipe: Cultured Butter & Tahini Cookies Of
course a cookie would be my first recipe to try! These cookies tasted (as one of my awesome
tasters reported) "like tahini fudge". What more could a person ask for? Really. These are so tasty and satisfying, my
tasters were snapping photos of the recipe.
Funny thing, we did a substitution by accident. Vegan cultured butter (cashews) was purchased
instead of typical cultured butter and it all melded well together. The cookies did have a slight tendency to
crumble which was mentioned in the book.
Presentation was "fancy" because of the sesame seeds. Easy to make.
If I were to rate these cookies I would give them a solid
8 out of 10. The author mentions that
she is typically not a dessert person and so this dessert recipe and the few
others included in the cookbook seem to be recipes provided by other
friend/chefs.
