Apple, Walnut, and Honey Upside Down Cake By Lidey Heuck
included in Colu Cooks, Easy, Fancy Food written by Colu Henry
Again I am including my review of a dessert for this
cookbook even though most of the book is not of desserts! And, where desserts are included they are
gathered from friends of the writer. I
decided to include this recipe because I have now baked the cake 3 times. That has to say something!
Making a variety of dishes from this book has been a pleasure for me but I do confess to especially enjoying desserts.
Right now we are experiencing a lovely fall and so an
apple cake seemed good for the season.
Adding honey and walnuts also felt cozy.
The chopped walnuts gave a crunch.
I used the yogurt instead of buttermilk and appreciated that the author
gave the option. Running out to the
store in the middle of a recipe seems like too much effort! What really pulls the flavor together in this
cake is the addition of a tablespoon of bourbon.
The second day for the cake had the flavors coming together even better. This is an easy cake to mix up and it does have a pretty "upside down"appearance.
This is my final review for this cookbook. I would give the book a "thumb's
up". Overall great for a cook who likes to try something new and would
like it to have a somewhat fancy look.
The bottom line for me was that the recipes were not too fussy and they
cooked up relatively quickly. As a last
two mentions for anyone checking out this book, my family loved the Spring Lamb
Ragu and the My Cee (both terrific pasta dishes). Happy cooking!
