Cauliflower & Ginger Soup with maple spiced cashews
This
soup was better than the carrot soup, and the cashew topping was excellent. The
cashews should have been really crushed--no chopping was specified in the
instructions, but in order to really absorb the chili powder (I opted for that
instead of cayenne, since it was a choice), turmeric, coriander, tamari, and
maple syrup, more surface area would have been better. And they would
have floated better, too.
Because
I have another cauliflower soup recipe, in my Instant Pot cookbook, I followed
the instructions in reverse order, first using the sauté feature to make the
topping, and setting that aside. Then I used the soup setting for five minutes
and I think it was a big time saver, and that was indeed a one pot
endeavor.
The
cauliflower was gigantic, from our farm share, and all the other ingredients
were on hand--no shopping needed. I will probably make that topping again,
perhaps for other soups.
