I love the relatable descriptions and Alexis’s mission of creating less waste. Her recipes do not require many specialized pieces of equipment or overly specific ingredients. There is a great variety of dishes and flavors. Her book has been a delight.

 

 

R E C I P E   O N E:  Green Skillet Pie

 

Substitutions / Exclusions:

I used a chard, spinach, and kale blend for the greens.

Shallots were difficult to find so I used ~3/4 of a red onion.

Dill is a controversial flavor in our house so I excluded it.

I used everything bagel seasoning in place of just sesame seeds and the end result was a bit salty.

 

Cooking / Baking Notes:

It only needed to bake for 40 minutes.

 

Summary:

This recipe is great for using residual greens but next time, we’ll skip the added salt.
